Growing Together: How To Start A Community Garden

It’s the eve of Earth Day, and a great Earth Day project for kids, family and the community is to create a community garden. I would love to see Cayman come together and venture into creating community gardens.  It’s a project I have been thinking about for some time now, and would love to hear from anyone interested in starting such a project, if that is you, please send an email to ecochiccayman@hotmail.com Starting a community garden, can be a simple and fun project.  First thing, plan out what herbs, fruits and vegetables you want to grow.  Consider saving the seeds and planting trees. Some great herbs that can be grown locally are: mint, parsley, rosemary, thyme and basil.  Eco Tip: Spring onion, is super easy to grow.  After you buy some from the grocery store, cut off the ends with the roots, and plant them straight into the ground, they grow super quick. If you can get your neighborhood on …

Meatless Monday

It’s Earth Week!  To kickoff the week, let’s start out with joining the movement, known as “Meatless Monday.” For all of you whole love bacon and eggs, a good burger, or steak, consider giving up meat for one day out of the week. Join the global movement known as “Meatless Monday” and go vegetarian or vegan for just one day out of the week, Monday. The planet will thank you for it. This challenge can be fun, you can get creative in the kitchen. I love to cook and find new recipes on Pinterest.  Feel free to explore the world of Pinterest for vegan and vegetarian meals, going meatless for one day doesn’t have to be a burden. Special thanks to Daybreak 27, for the opportunity to talk about Meatless Monday.  You can watch my interview with Edlyn Ruiz, click here. Meatless Monday was launched in 2003 in collaboration with the Center for a Livable Future (CLF) at the Johns Hopkins Bloomberg School of Public Health. The goal behind the movement is to reduce meat consumption by 15% …

Confetti Donuts With Hibiscus & Rose Hip Sparkling Tea

It’s Kindness Wednesday!  Let’s sprinkle the world in kindness and some donuts too! Today’s act of kindness is baking donuts and sharing them with my family.  Instead of serving up a cup of coffee to go with the donuts- that’s just too cliche- I made Hibiscus and Rose Hip Sparkling Tea.   Confetti Donuts!   I modified this recipe to make it both dairy-free and gluten-free. Below is the recipe from Pinterest with slight modifications. Ingredients: DONUTS 1 cup (125g) all-purpose flour (careful not to overmeasure) 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon ground nutmeg (gives them that “bakery donut” taste) 1/3 cup (65g) granulated sugar 1/4 cup (60ml) almond vanilla milk 1 large egg 2 Tablespoons (30g) melted Earth Balance Soy Butter 1 and 1/2 teaspoons vanilla extract 1/2 cup rainbow sprinkles GLAZE 1/4 cup (60ml) almond vanilla milk 2 cups (240g) confectioners’ (powdered) sugar 1 teaspoon vanilla extra sprinkles to sprinkle on top, optional Directions click here   Hibiscus and Rose Hip Sparkling Tea   What You Will Need 1 …
