Who says you can’t have a taste of Christmas all year round? Swirling with cinnamon and spice, this therapeutic herbal tea is based on a classic, Ayurvedic formula to promote longevity, stamina, balance and circulation. Perfect for the holidays when everything gets a little crazy! Cinnamon bark may help improve insulin resistance and make the cells of the body absorb glucose more easily. It has been said that cinnamon can lower blood sugar levels and slow digestion, which further reduces blood sugar after eating. Origin: China. 50g makes: 50 cups (based on 3g per 8oz of water, infused 3 times).

Temperature: 212 degrees F, Infusing time: 3-5 minutes

Kadi Pentney and Kelli Dawson are the lovely ladies behind the ever charming Tea Time In Cayman. Tea Time in Cayman is a supplier of premium loose leaf tea, teaware and tea-themed gift baskets. Want to know more about their teaware click here

How did this lovely venture into the world of tea begin? For Kadi, both “her love and her family’s love of tea sparked a desire to turn a hobby into a business.” As for Kelli, her “love for tea was developed from a young age as tea time was a family ritual growing up on Vancouver Island and she is excited to bring a hint of West Coast flavour to Cayman.” Their love for tea goes beyond brewing organic tea, they host amazing tea parties!

A Few Of My Favorite Things

Curious to know what Kadi and Kelli’s favorite Tea Time in Cayman, tea flavors are?

Kadi: Oh Natural- Peppermint, Super Zen, Caramelicious, and Genmaicha “Popcorn” tea.

Kelli: Super Zen, Go Green and Christmas in Cayman tea.

 

No cup of tea is complete without some tea shortbread cookies

Matcha Green Tea Shortbread Cookies

 

Ingredients:
3/4 (2.25 oz.) cup confectioner’s sugar
1 1/2 teaspoons of Tea Time in Cayman’s Super Zen 

10 teaspoons (5 oz.) unsalted butter, room temperature

1 3/4 cups (8.5 oz.) flour
3 large egg yolks
1 cup granulated sugar (to coat the dough)

Preparation:

1. Whisk the confectioner’s sugar and Super Zen together.
2. Beat the butter and Super Zen sugar mixture together in a stand mixer (use paddle attachment) until the butter is smooth and light.
3. Add the flour and stir until just combined.
4. Mix in the egg yolks until they are incorporated and the dough comes together. Gather the dough into a ball and flatten it into a thick disc. Wrap the dough in plastic and refrigerate for at least 30 minutes or until it is firm.
5. Preheat the oven to 350°F. Use a rolling pin to roll the dough out to about 1/2-inch thickness. Use a small cookie cutter (about 2-inches) to cut shapes from the dough.
6. Roll the cut shapes in granulated sugar and place on a parchment-lined baking sheet. Bake the cookies for 12-15 minutes or until the edges are golden brown.

*This recipe makes about 5 dozen 1-inch cookies (about 3 dozen 2-inch cookies). Store in airtight container away from sunlight as the color will fade with exposure to sun.
