Red: The New Flavor of The Week

Red Velvet cupcakes are my absolute favorite! I was thrilled once I found out Britta had made a batch of vegan and gluten free red velvet cupcakes.  To give the cupcakes that vibrant signature red look, Britta used beets as the primary ingredient.  The delicious frosting was cashew cheese, a spin on the traditional cream cheese frosting.  I found the frosting and cake to have a well rounded balance of sweet and savory.  I personally, am not a huge fan of beets, however, I did find the red velvet cupcakes to be quite nice.  The taste of beets was not overwhelming and the cashew cheese icing blended nicely with the cake. What I enjoyed most was being able to indulge in my favorite cupcake and know that it was a relatively healthy option as beets are packed with essential nutrients.

If you are in the mood for cooking up some pasta, pizza or lasagna then you know the most important ingredient is the tomato sauce.  The best tomato sauce you will ever taste is one made with local organic tomatoes.  On that note, bruschetta is another favorite to go with any Italian inspired dish.  What better way to serve some bruschetta than made from tomatoes picked at your local farmers market with some tomato flax seed crackers.   Flax seed crackers are a bit of a super food, packed with essential and nutritious ingredients. Celebrate the weekend by mixing up some easy to make citrus mimosas or test out these fun flavors at your next Sunday Brunch.  The good old fashioned mimosa is Champagne and orange juice. Whilst, it stands the test of time, sometimes it is nice to shake things up.  Below are a few simple to make cocktail recipes that gives the traditional mimosa a twist.

What You Will Need

A bottle of Champagne or your favorite bottle of Prosecco, blood orange, grapefruit, lime and lemon.

Blood Orange Sunset Mimosa

Recipe Per Glass: Glass of Champagne and 1 blood orange.

Blood Oranges are fantastic to use in mimosas and give a beautiful pop of color.  They have a slightly richer taste than regular oranges giving your mimosa a burst of flavor.  It is truly the traditional mimosa with a twist.

Pink Panther Grapefruit Mimosa

Recipe Per Glass: Glass of Champagne and 1/2 a grapefruit.

A grapefruit mimosa has a strong flavor.  It is slightly tart but not overwhelmingly.

 Zesty Lemon and Lime Mimosa

Recipe Per Glass: Glass of Champagne, 1/2 lemon and 1/2 a lime.

The combination of lemon and lime with champagne has a wonderfully refreshing taste.  The lemon and lime have the perfect balance.  I found the lemon and lime combo to taste lighter and sweeter than the grapefruit mimosa.

Wanderlust Wednesday: Why You Should Visit Garden Of The Gods

Colorado, is one of the most beautiful places I have visited.  My absolute favorite spot is Garden of the Gods.  It has an incredible display of red rock formations— a true natural wonder of epic beauty.  I recommend all world travelers should visit this spectacular place at least once.

Why You Should Visit Garden of the Gods

Garden of the Gods is famous for is red rock formations.  Throughout this National Natural Landmark you have a multitude of dramatic scenic photo opportunities.  There is much serenity walking along the pathways and feeling connected to nature.  It is a great leisurely walk with striking views and vantage points.  One of the coolest vantage points for me was being able to see “The Incline” (Manitou Incline, Colorado Springs)  hiking trail in the distance.  It is a hiking trail that is most definitely on my bucket list.

Colorado, is a wonderful place for hiking and Garden of the Gods is one of the easiest hikes with paved pathways.  Be sure to bring plenty of water to stay hydrated.  Furthermore, it serves as a wonderful recreational site, as it offers opportunities for: hiking, technical rock climbing, and mountain biking.  The magnitude of the beauty of Garden of the Gods can never truly be captured by a single photograph, it is a place best to be experienced to take in all of its glory.

A local non-profit organization, Dog Treats Cayman, is repurposing wine boxes into stylish dog feeding stations. This creative endeavour is bringing awareness to both conservation and adopting local animals in need.

Heidi and Mark have teamed up with local businesses including: Premier Wines, Grand Old House, Jacques Scott and BlackBeard’s who generously donate wooden wine boxes to be transformed in eco chic dog feeding stations. Repurposing the wooden wine boxes creates a sustainable product and supports local organisations. The elevated dog feeding stations are designed to facilitate healthy eating habits as well as other benefits. 100% of the proceeds are donated to PAWS of East End or Canine Friends. Both local charities encourage the community to adopt rescued animals in need of a forever home.

The Benefits of Elevated Dog Feeding Stations
