Confetti Donuts With Hibiscus & Rose Hip Sparkling Tea

  It’s Kindness Wednesday!  Let’s sprinkle the world in kindness and some donuts too! Today’s act of kindness is baking donuts and sharing them with my family.  Instead of serving up a cup of coffee to go with the donuts- that’s just too cliche- I made Hibiscus and Rose Hip Sparkling Tea.   Confetti Donuts!   I modified this recipe to make it both dairy-free and gluten-free. Below is the recipe from Pinterest with slight modifications. Special Delivery: Cupcakes

  It’s Kindness Wednesday! Woohooo! Here is my post for Project: Words of Kindness. Today my act of kindness was baking up a batch of yummy cupcakes (If I do say so myself) and sharing them with friends, family and neighbors. I did a trial run of baking my sister’s birthday cake, as her birthday is almost a week away.  Instead of baking a whole cake, I baked cupcakes, as they are easy to share and deliver.  I made a Chocolate Cake infused with Raspberry Jam, iced with Marshmallow Frosting! Yum!  I am proud to say it was Vegan, also Dairy-free and Gluten-free. Made With Love: Chocolate Raspberry Cake with Marshmallow Frosting The cake mix was from the box, it’s dairy-free and gluten-free, and the raspberry jam is organic.  I whipped up the cake mix, and added the raspberry jam in the centre of the cupcakes with another layer of cake batter on top. Pink Champagne Sugar Cookies & Other Goodies

  I love baking, especially at Christmas!  This was my first time baking with Pink Champagne.  First, I attempted to infuse Pink Champagne into the sugar cookie batter and bake.  However, that did not turn out  as planned.  To be honest, they tasted a bit tart.  Not to worry!  Later, I tried whipping up a Pink Champagne Buttercream Frosting.  Yum!  It just so happened, while I was baking my sister requested Candy-cane Sugar Cookies.   Pink Champagne Buttercream Frosting I used a recipe from Pillsbury.  However, due to my food allergies I had to modify it slightly. My modified version: 1 cup Earth Balance Butter 3 cups powdered sugar 1/2 cup pink champagne (I added a little extra) 1-2 drops red food coloring Candy-cane Sugar Cookies I used a box of dairy-free and gluten-free sugar cookie mix.  After using cookie cutters to make Christmas inspired shapes, I added in pieces of candy-cane before baking.  An alternative option, is to decorate the baked cookies with regular frosting and then add candy-cane pieces as a garnish.   …

Eco Chic Baking Jars

  I have been on a bit of a baking kick lately.  I am hoping to have some recipes to share with you soon.  These jars are a bit of a lifesaver.  I am not a fan of having boxes and packets that can’t be properly closed after opening, so I started storing my baking ingredients in recycled & repurposed glass jars. Simple and fun DIY project.  I saved some spaghetti sauce jars and made some fun labels. Voila, Eco Chic Baking Jars. What You Will Need: recycled glass jars, and clear adhesive transfer paper.   What To Do: Design your labels in Word or Pages and print the labels onto the adhesive transfer paper.  Follow the steps on the packet.  I still had a few “whoops moments.”  It helps to print out extras incase of any mishaps.  Here is a video that I found most helpful. Red, White + Blueberries… 4th of July Treats

  This morning I had some time to do a little 4th of July baking.  I decided to do red, white and blue inspired fruit tarts for this 4th of July.  The fresh fruits helps to balance out the healthy and the not so healthy but delicious custard.   Confession the pastry is not made from scratch but I did bake it lol This light and yummy dessert is great for 4th of July dessert bars or for guests at dinner or BBQ’s.
