It’s Kindness Wednesday! Woohooo! Here is my post for Project: Words of Kindness.
Today my act of kindness was baking up a batch of yummy cupcakes (If I do say so myself) and sharing them with friends, family and neighbors.
I did a trial run of baking my sister’s birthday cake, as her birthday is almost a week away. Instead of baking a whole cake, I baked cupcakes, as they are easy to share and deliver. I made a Chocolate Cake infused with Raspberry Jam, iced with Marshmallow Frosting! Yum! I am proud to say it was Vegan, also Dairy-free and Gluten-free.

The cake mix was from the box, it’s dairy-free and gluten-free, and the raspberry jam is organic. I whipped up the cake mix, and added the raspberry jam in the centre of the cupcakes with another layer of cake batter on top.
I found this amazing recipe on Pinterest. I modified it by using a soy based butter.
