Confetti Donuts With Hibiscus & Rose Hip Sparkling Tea

It’s Kindness Wednesday!  Let’s sprinkle the world in kindness and some donuts too! Today’s act of kindness is baking donuts and sharing them with my family.  Instead of serving up a cup of coffee to go with the donuts- that’s just too cliche- I made Hibiscus and Rose Hip Sparkling Tea.

Confetti Donuts!  

I modified this recipe to make it both dairy-free and gluten-free.

Below is the recipe from Pinterest with slight modifications.

Ingredients:

DONUTS
1 cup (125g) all-purpose flour (careful not to overmeasure)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg (gives them that “bakery donut” taste)
1/3 cup (65g) granulated sugar
1/4 cup (60ml) almond vanilla milk
1 large egg
2 Tablespoons (30g) melted Earth Balance Soy Butter
1 and 1/2 teaspoons vanilla extract
1/2 cup rainbow sprinkles

GLAZE
1/4 cup (60ml) almond vanilla milk
2 cups (240g) confectioners’ (powdered) sugar
1 teaspoon vanilla
extra sprinkles to sprinkle on top, optional

Hibiscus and Rose Hip Sparkling Tea

What You Will Need

1 tea bag of Hibiscus and Rose Hip Tea, Sparkling Water, fresh raspberry and strawberry.

How To Make It

Brew tea as usual.  After tea steeps, let it cool.  Pour tea into pitcher, add sparkling water and ice cubes.  Toss in fresh raspberries and strawberries to infuse in sparkling iced tea.

Enjoy!

Toss kindness around like confetti!
