Organic Food In Your Backyard

    Choosing fresh organic food is a way of life.   One way to ensure that your food is organic is by growing it yourself.  At the beginning of summer I embarked on growing my own little food garden.  There has been some success, and some fails.  Overall, I’m writing it down as learning.  I have yet to get lemon seeds to grow into lush lemon trees.  I absolutely love lemons!  I always add them to a tall glass of ice cold  water.  Unfortunately, when I try planting the lemon seeds they never seem to want to grow, which is a shame.   My hope is that eventually, I will have a lemon tree in my backyard.  I have to admit limes are just not the same thing lol In the picture above, you can see that I have successfully grown mint from a packet of seeds.   I just love the fresh scent of mint.   Though I am not a fan of mojitos, mint is great for making some fun flavored mojitos …

Red, White + Blueberries… 4th of July Treats

  This morning I had some time to do a little 4th of July baking.  I decided to do red, white and blue inspired fruit tarts for this 4th of July.  The fresh fruits helps to balance out the healthy and the not so healthy but delicious custard.   Confession the pastry is not made from scratch but I did bake it lol This light and yummy dessert is great for 4th of July dessert bars or for guests at dinner or BBQ’s. Ingredients Madagascar Vanilla Custard (Fosters Strand Location Sells It) so yummy! Strawberries Cherries Blueberries   Happy Baking! with love, xo

4th of July Orange + Lemon Infused Water

    Happy 4th of July!!! Today is one of my favorite holidays!  Orange + Lemon infused water is a refreshing drink to serve your guests at your 4th of July BBQ, Brunch or Dinner party.  It’s a great way to use up your lemons and oranges.  The citrus flavor is delicious! Bonus- It’s 100% healthy and not only are you keeping yourself hydrated with water (a must during summer days) you are getting the added benefit of a Vitamin C boost to keep you energized for a day of fun in the sun and a spectacular show of fireworks. Ingredients 2 slices of oranges cut into pieces 2 slices of lemon spritz a little orange into water spritz a little lemon into water let it chill for an hour or so and then enjoy! p.s- the longer the oranges and lemons infuse into the water the strong the taste 🙂   When you have drank the last drop of your orange and lemon infused water, please don’t let the fruit pieces go to waste. …

Countdown to Zero Waste Week

Today you are in for a real treat as Eco Chic Cayman is proud to present its first guest blogger, Rachelle, the creator of “Zero Waste Week,” a campaign in the U.K which seeks to educate and create awareness about food waste. Eco Chic: 4th of July Brunch with Sangria

4th of July is one of my favorite holidays! Fireworks, yummy food and time well spent with friends and family.  Over the weekend, I tested out some ideas for the quickly approaching 4th of July Holiday,- this Wednesday!  (not a public holiday here in Cayman).  So here are the goodies I came up with…. 1. Eco Chic Table Decor Every now and then it is nice to incorporate fresh flowers into your brunches, lunches, and dinner parties.  In the picture above are some fresh coral pink and white roses perfect trending summer colors!  The great thing about choosing roses is that later the roses can be repurposed to make potpourri and/or rosewater. 2. Sunday Brunch Sangria This was my first time making Sangria and thankfully it turned out pretty good. Ingredients: 1 Bottle of Red Wine ( I used an unfinished, half a bottle of Red Wine) 2-3 slices of orange 2-3 slices of lemon 6-8 slicked strawberries 1 small diced apple Chill overnight, and enjoy the next day! 3. Eco Eats: The Greenhouse

The Greenhouse is a wonderful treasure here in Cayman for all the environmental and diver enthusiasts.  Located at Lighthouse Point, (571, NW Point Road, West Bay) just before the Cayman Islands Turtle Farm.  The Greenhouse resides amongst a spectacular panoramic view of the always inviting Caribbean Sea.  One of my best friends introduced me to The Greenhouse and it was an instant favorite place to eat. I love being immersed in an eco friendly atmosphere.  The food is delicious, with so many healthy options!  The menu caters to those who are looking for Gluten Free, Paleo friendly and allergy friendly options.  One of my favorite dishes is the Brie Personal Pizza! Yum! For drinks it is always a toss up between the ever refreshing Lemongrass Moringa Tea (Locally Brewed by James Pedley) and the Banana Caramel Smoothie.  My advice, have both, you won’t regret it! The food is just one of the many reasons you will fall in love with this place.  The eco friendly mantra of The Greenhouse is admirable.  The are very supportive …
