Cheers to Friday!  Celebrate the weekend by mixing up some easy to make citrus mimosas or test out these fun flavors at your next Sunday Brunch.  The good old fashioned mimosa is Champagne and orange juice. Whilst, it stands the test of time, sometimes it is nice to shake things up.  Below are a few simple to make cocktail recipes that gives the traditional mimosa a twist. What You Will Need A bottle of Champagne or your favorite bottle of Prosecco, blood orange, grapefruit, lime and lemon. Blood Orange Sunset Mimosa Recipe Per Glass: Glass of Champagne and 1 blood orange. Blood Oranges are fantastic to use in mimosas and give a beautiful pop of color.  They have a slightly richer taste than regular oranges giving your mimosa a burst of flavor.  It is truly the traditional mimosa with a twist. Special Delivery: Cupcakes

  It’s Kindness Wednesday! Woohooo! Here is my post for Project: Words of Kindness. Today my act of kindness was baking up a batch of yummy cupcakes (If I do say so myself) and sharing them with friends, family and neighbors. I did a trial run of baking my sister’s birthday cake, as her birthday is almost a week away.  Instead of baking a whole cake, I baked cupcakes, as they are easy to share and deliver.  I made a Chocolate Cake infused with Raspberry Jam, iced with Marshmallow Frosting! Yum!  I am proud to say it was Vegan, also Dairy-free and Gluten-free. Made With Love: Chocolate Raspberry Cake with Marshmallow Frosting The cake mix was from the box, it’s dairy-free and gluten-free, and the raspberry jam is organic.  I whipped up the cake mix, and added the raspberry jam in the centre of the cupcakes with another layer of cake batter on top. Endless Summer Orange + Coconut Popsicles

  Summer might be slipping away but the memory of summer doesn’t have to fade.  For those hot summer days on the rise, enjoy a zesty orange & coconut popsicle.  I came across these plastic popsicle molds at Fosters, The Strand, which is good because they can be reused all summer long and after.  It beats having to buy and discard the one time use traditional popsicle sticks.   The recipe…  -Endless Summer Orange + Coconut Popsicles-                     What You Will Need: 2 oranges, coconut milk rich and creamy, and milk free vanilla ice cream. What To Do:   1. Pour a can of coconut milk into a mixing bowl, squeeze 2 oranges worth of juice (add more for extra flavor) 2. Stir well 3. Add 1 spoonful of milk free vanilla ice-cream 4.
